This was my second time making them. First time I made them I stuffed them too much so they didn't turn out right, but these were really good.

Decided to try making ramen from scratch. This is a two days process so I only did the broth today. tonkotsu broth. Has pork neck bones, leek, onion, garlic, and ginger. 10 hour cook. But I may do 12. I have one hour to go. But this is how it started out.

Did 11hrs. Cant wait to do the rest. Might do it this weekend. Gonna freeze the broth until then

Yea overnight for atleast 8hrs or so

Getting the jerk seasoning really inside and up inside the chest plate is key to not drying it out and have it nice and moist with flavor since breast usually takes the longest to cook

Everything from scratch except for the actual jerk seasoning but alot more went into it.
