This is misinformation. She's right about the metal expanding when it gets hot, that's thermal expansion. However, stainless steel doesn't have "pores" and the water is behaving like that because the pan is so hot the water immediately turns into a gas, which the water floats on.

A few sites I looked around on say that stainless steel can be porous, especially the lower quality kind.. which is how they seem to be explaining food sticking to the pan.

Maybe there's some truth in both arguments
