Thing with this is that a lot of the MCU shit was referenced in these shows so how could they NOT have been canon???

The Chitauri invasion of NY was referenced in Luke Cage.
The invasion is also referenced in Iron Fist.
Stark Industries was mentioned in one of the last episodes I watched of Iron Fist (9 or 10, can't remember).
Roxxon Corp was also mentioned in Iron Fist (An oil rig of Roxxon's is where the final act takes place in IM3)
I'm almost positive Roxxon was also mentioned in The Punisher
Hammer Industries is a big part of Luke Cage.
Cap is mentioned by name in Luke Cage.
Shit... I read Cap is mentioned by name in pretty much every show.
WHiH News covers Frank Castle as well as the Stark Expo from IM2.
Reference to the Chitauri invasion is on the wall in Karen's office in The Punisher.
Thor's hammer is supposed to be referenced at least once in every show.

I'm sure there will be more as I go through each show.

So when weren't these shows canon??? Even that Cloak and Dagger show is 'posta be canon.

Yeah, it was always kinda Canon.

Most the reference to the MCU was vague in the Netflix shows, other than the mention of Starks inventions.
