COMMUNITY What are you cooking in 2025?

Are those carrots or sweet potatoes? And what’s that underneath?
Looks like quinoa underneath. I eat a lot of that for fiber and protein. Probably sweet potatoes on top. Looks like a protein meal for trying to bulk if i had to guess.
 
First time I had an issue finding a seasoning. Gumbo File was in none of my stores. I ordered it from Amazon. Now that I have other, gonna try to make this gumbo.

My bad for being late bro a lot of real life shit been happening. If you haven't done it yet,


You need the holy Trinity (bell peppers(green) celery, onions) and I put garlic.

For the meats I use smoke sausage, shrimp, and blue crabs. Want to put the seafood in towards the end because it cooks super fast and tbh you can turn the pot off after 5 min of adding the seafood.

First you want to make the roux. Use half cup of canola oil and less than half cup of flour.

CONSTANTLY stir on low. The purpose is to constantly stir with a whisk or spoon until the mixture turns golden brown. Warning when it turns color it can quickly burn. You will know if it's burnt based on the smell or a lot of smoke. It's a sweet spot and will take practice. As soon as the roux is brown (golden) add your holy Trinity and garlic. Btw of course the veggies will be diced/chopped into cubes. I usually use 1 bell pepper, 2 onions and 3 celery stocks and a whole garlic but it depends on you..


Once the mixture roux and veggies is cooking constantly stir the gooey material until the veggies is tender. Then add the sliced smoked sausage and cook until sausage is golden brown.

Afterwords you can use a decent amount of water or chicken stock (it depends on your sodium intake) but I do water and season the water with zatarans, tony sacuhers, onion power, garlic powder, bay leaves and a bottle of Zaterana gumbo file(MAJOR KEY). Use dry seasons and taste for flavor based on your liking.

Let this boil on middle heat for about 20 mins. Then you want to add your cleaned seafood and cook for additional 5 min and then turn off everything and you should be good.

Some people also add chicken wings to their gumbo if you want that cook the chicken wings seasoned naked pan fry earlier and put to the side. You would add them with the seafood.
