AB been trippin lately. He cooked collard greens and black peas together in one pot the other day. I wish somebody would serve me that. Man FOH lmao.

As long as I can remember, we’ve always eaten greens for the NY. It represents health and wealth. I’ve just never had them both cooked together all in one pot as a one pot meal.

Yea it's always been just black eye peas with the pork jowl. Even when i worked in the grocery stores never saw them get greens like at all
 
This was similar to the recipe I was gonna try.. @loud-ninja threw me off wit that seafood stock. This dude used chicken stock as well

Different ways you can do it. But seafood stock will give you a lot of flavor due to distinct taste of shellfish . Chicken stock can be kind of bland. They can be mixed as well. There is no one way to make gumbo as long as you do have the roux

Also, that recipe doesn't have any seafood in it. It is just chicken and sausage. That is called ya-ya gumbo

Yeah I think I might do half and half(chicken/seafood stock)
 
After looking up seafood stock, it's not too much involved. Vegetables, herbs, and seafood of choice. I always make shrimp so next time, I'll save the shells. I can get some crab legs to eat and save the shells.

I just tossed out a buncha shrimp tails into my compost too.

I usually dry them out and grind them so they decompose into the compost quicker but couldnt be bothered today
