More than 30 secs cooks the inside more than I’d like. That’s why I just get the skillet as hot as I can.I was gonna ask if you sear it. But 30 secs is too short of a time for me. I generally just cast iron it all the way through. Nothing past medium - medium well.
Is that a ribeye? Looks like it. Generally the cut i usually buy.

I used to use a cast iron the whole way through but it generates too much smoke in the house for my liking.
