did you have it on medium or low heat the first time when you thought you burnt it? I kept mine pretty low just to be safe but honestly I think I coulda turned it up a bit and got it to that color quicker than I did
I was changing from low to medium.

This attempt took me an hour. So I still wasn't doing like others I saw in videos. They did theirs in 40min. Some was even a lot thicker to where the oil was barely there.

id say around 30 minutes or so and I felt like that was too long and I had mine too low but if people stirring for a damn hour.. sheesh
 
Yeah it's a common theme in the South that slow and steady adds extra "love" in the food. ALOT of sore wrists made some of the best Gumbo
 
My roux separated at the end. Kind of pissed. But it doesn't taste bad. Just a bad presentation. It floats to the top of the liquid
 
I tried. Probably just get pre-made roux next time. He'll, I doubt i make gumbo again, lol.
