COMMUNITY What are you cooking in 2025?

For every cup of grits you use four cups of liquid

I used three cups of water and one cup of heavy cream
Brought the liquid to a boil and slowly added the grits
add some salt and pepper
Cut the heat down to a simmer with the occasional stir
Once the grits start to take form, add the sweet potato
However, I baked the sweet potato at 375 degrees
Peeled off the skin, added the sweet potato to the grits and mashed in the sweet potatoes
add some butter and brown sugar
do some final stirs

There is only a hint of sweetness with a tangy after taste. Real good.
Yeah got to try this one. I’m usually a salt and pepper grits guy over sugar grits, but with the sweet potato I can rock with the sweetness.

I'm gonna attempt some gumbo this week even though brotha @AP3.0 abandoned me on my quest for an authentic recipe... 😕😒 lol

Random question too.. I was in the store looking for some duck fat but couldnt find it. Saw some goose fat tho.. that shit hit the same or nah? 🤔

You inspired me to make gumbo now, @Inori . Either that or brown stew chicken this weekend.

I wasn't all that impressed with gumbo before. It was always just "cool" but never amazing. I had it 3 different times and one was in new Orleans. I went to a spot out in dc 3 weeks ago and that was the best damn gumbo I ever had.

hmm that makes me think tho.. every now and again we should have a dish errbody agrees on and post up to see who hooked it up the best that week.

Not all the time but it might get this thread a bit more active and folks might try cooking something they havent before. What yall think? 🤷🏽‍♂️
 
Just watched a few gumbo videos. Naw, I aint making that anytime soon, lol. Way too much going on. Maybe I'll get inspired in the summer when crab season hits.
 
I hate when restaurants leave the tails on for a dish like that. It aint adding no extra damn flavor take that shit off and save me the trouble lol
That shit be pissing me off too. And I don’t care what dish it’s in, take the damn tails off. If I wanted to work for the bite I’d get crab legs.
 
I've done it 2 ways, the 1st one was me making the roux then the other i used a pre mix. On both of them i added chicken, crab meat, andouille sausage,crawfish tailmeat. Bell peppers onion and some other stuff

preciate it. thats pretty much the route im taking tomorrow.

Chicken, Crab Meat, Chicken Andouille Sausage, Shrimps, Bell Pepper, Onion, Okra etc.

Gonna make the roux myself I just havent decided on what im using yet. I got that goose fat, I could use some regular olive oil or I got some beef tallow im considering. Leaning towards the goose fat. might be too much going on with the beef tallow
