Yeah got to try this one. I’m usually a salt and pepper grits guy over sugar grits, but with the sweet potato I can rock with the sweetness.For every cup of grits you use four cups of liquid
I used three cups of water and one cup of heavy cream
Brought the liquid to a boil and slowly added the grits
add some salt and pepper
Cut the heat down to a simmer with the occasional stir
Once the grits start to take form, add the sweet potato
However, I baked the sweet potato at 375 degrees
Peeled off the skin, added the sweet potato to the grits and mashed in the sweet potatoes
add some butter and brown sugar
do some final stirs
There is only a hint of sweetness with a tangy after taste. Real good.
