I should have taken them out earlier. The third time I opened to check, it had a reading of 132-135, which is perfect for me. But I went by the recommend temp, which says 145 degrees. So I put it back in for like 10mins. Kind of dried out.What went wrong? Didnt have the flavour you wanted or what?

I have the below type of grill. If im fast cooking, I would put the fuel in the main body. If im slow cooking/smoking, I put the fuel in the smoker boxyeah its too delicate for slow smoking....takes on way too much smoke
salmon needs like 30 mins over 350-375
i made the same mistake when I started smoking chicken......had em out there all day at 225 lookin sexy as hell, went to bite one and it was straight rubber
