Bacteria grows most rapidly between 41 and 135 degrees. This is why preserving freshness is a matter of sealing food up, placing ready to eat foods above all other foods, and refrigerating it after use because it prolongs the shelf life.

The reason why ketchup that's been open and out for too long tastes funny: air borne bacteria has made it's way inside the bottle.
 
I never purposely put ketchup on anything.
