I don’t buy frozen shrimp.
Unless I’m using them as fishing bait.

them shrimp were roasted to perfection, I had to go buy more for the rest of the week so I can make this again!
 
Aye cuz I'm gone need the recipe for this cause I usually do mine with gravy and was looking to try something different

I had like 3 pounds of oxtails washed and rinsed them patted em dry.

Put them in a bowl

1/4 cup brown sugar
Garlic powder
Allspice
Salt
Pepper
Fresh thyme
Worchesire sauce
Soy sauce
Few drops hot sauce

Mixed it all up and marinaded them for like 3 hours. Then i made up some flour like im frying chicken and coated them and then browned em all all sides for like 5 minutes in a pan with some oil. Took em out and put them on the pressure cooker.

Took like a cup or red wine (or beer, your choice) and put it in the pan i browned the oxtails and scrapped up all the browning in the pan. Cooked it for like 2 minutes to cook out the alcohol.

Then chopped these up and sauteed them in that pan:
1 onion
4 green onion
4 garlic cloves
3 carrots
2 stalks celery
3 jalapenos (2 w seeds removed)


Cooked for like 3-4 minutes. Then i put in one of those small cans of tomato paste and seasoned it again with garlic powder, seasoning salt, pepper. Added some beef stock to it (how much depends on how soupy you want the stew).

Let that simmer for like 5 minutes then put it all in the pressure cooker.

I ran it one cycle for like 45 minutes. Then added the red potatoes and 2 cans of butter beans. Ran it again for like 30 minutes. It wasn't as thick as i wanted it so i took some of the stock out and mixed in corn starch and mixed it back in the pressure cooker. I did that till it got the consistency i wanted.

I took that pic after the first cycle when i added the beans and potatoes.

This how it turned out when it was done. Ate it with cornbread patties.

You made them hoecakes? Those are the best.

@Banginscrew901 another thing i didn't do because i was tryna finish and go fishing that i normally do...

I normally trim the oxtails. I'll leave some of the fat on, but not alot. I didn't do it that time because i was rushing lol.
