You gotta trade them into a Trapper or Fence. The Fence can use the legendary animal items to create trinkets that will add to your stats. The Hunter can craft you unique clothing using the legendary items. A lot of them will require multiple items though so you may be hunting for awhile to get something you really want.

Besides that, the only pelts you will ever want to keep is a "Perfect Pelt" from whatever animal you hunted. Those can either be sold (not for too much though) or used with the Trapper to craft or turned into camp to do cosmetic camp upgrades.

It would be nice tho if the aligator skin could fashion into a primitive bullet proof vest, or the cougar skin was additional warmth in the code. More immersion from that side of things

You can go to any train station on your map and just travel to Saint Denis for like 8 bucks. Its the biggest city in the game and has all the vendors. I would just go there and meet up with him if you havent travelled there yet. Dont need to do any of the quests there until Dutch brings you there in the story. Then you can just catch the train or stagecoach back to wherever you were. The Fence and Trapper are right next to eachother in Saint Denis.

you can also take that shit to the butcher in your camp and donate for crafts
you can hook up your tent/room and other shit around the camp
again, a lot of it takes more then one pelt or feather or whatever.......the good thing i found out is, you can bring them shit piece by piece and they will store it until you get it all
cuz there's some shit that requires like 4 pronghorn or 2 elk and you cant carry all that at once
