I think we need to make a distinction between remixes. There's three kinds of remixes:

1. A remix where the beat is completely different with the same vocals. (The World Is Yours, Rocafella, Next Level)

2. A remix where the beat is the same with additional people rapping that weren't on the original version (I Shot Ya, Ruff Ryders Anthem, I Got 5 On It)

3. A remix where the beat and lyrics are completely different. Remixes like these are basically completely different songs but for some reason they are called "remixes". (One More Chance, Street Dreams, Excuse Me Miss)

You forgot one: Cross genre remixes.

A whooooole lotta 80's and early 90's hip hop had House remixes, that was pretty much a standard on the singles that got released. Shit like this:

 
If I'm remembering right, Wyclef Jean released at least 5 versions of "Gone 'til November"...

The original rap version on the album...

The "pop" version from the music video...

The remix with Canibus and Destiny's Child...

The rock version with KISS...

And the dance hall version (arguably the best version)...

I can't find proof those last two exist but I'm sure I didn't imagine them...

Actually there was a reason for that.

Hip Hop got a bad rap in the 80s (no pun intended). At Hip Hop clubs fights used to break out and people were getting stabbed and shot. So the nightclub owners would tell the DJs not to play any rap music, so they played House Music instead. When the record labels realized that rap was effectively being banned at nightclubs they made Hip House remixes so the DJs could play their records.
