Lately I've been making a bunch of keto friendly pizzas. Made a sf bbq chicken pizza, philly cheesesteak pizza, red sauce pizza. Today, I will try something unique.
We have a famous pizza place here called mooses tooth and they do these pretty unique pizzas. Since I've been on my weightloss journey the only thing I can eat from there is chicken wings but I decided I will try recreating one of their pizzas. They make a thai chicken pizza I loved so today I will be using my fathead crust and using peanut sauce as the base then top with chicken, provolone and mozzarella, bean sprouts, and some other shit.
Its gonna be awesome though. Might make the sauce myself but I'm gonna check the stores out and see If I can find a low carb peanut sauce.

I’ve made a couple of batches of fathead biscuits thatvturned out like some Red Lobster cheddar biscuits...but I’ve never tried it as a pizza crust...and a lot of tha cauliflower crusts still have mad carbs...but I’ve been wanting some pizza

For a personal pizza that's still a solid 4 huge slices, I'll take 1.5 cups of mozzarella and 2oz cream cheese, melt in microwave for 90 seconds. Halfway through, stir it up then let it finish melting. Once melted, stir a little more then add 3/4 cup almond flour and an egg and Italian seasoning and garlic powder and stir stir stir. Once it cools a bit you can use your hand and knead it as it will become more doughy. Its stickier than most dough so wet your hands with cold water and it wont stick so much. Then place on a baking sheet or pizza pan lined with parchment paper and shape with your hands or put on top another piece of parchment paper and roll it out. Then put in the oven at 425 for 10-15 mins. Pop any bubbles that rise with a fork. After about 15 mins take it out and add your toppings then bake for another 10-15 mins until nice and melted.
Shits the best low carb dough I've ever had and loaded with almonds so plenty of fiber and nutrients.
