I use Graces Hot Jerk seasoning and slow bake and grill whatever meat I'm dealing with, pause

Shit good and infuses with the meat good

Ion measure nothing fam so dont even ask.

Take like 2-3 red onions
A few spears of green onion
The juice from about 3 limes
Salt, Pepper, Garlic, Ginger
Soy sauce
A little orange juice
Fresh thyme
Brown sugar
White or apple cider vinegar
Allspice
A lil cinnamon and nutmeg
I use habeneros but if you dobt want it dumb spicy use jalapeno or two
A little rum of your choice

Put it all in a blender/food processor.

Save some to the side and use the rest to Marinade the chicken overnight. I usually use skin on thighs but any chicken works.

When you grill it still throw some salt & pepper on it.

I also use pecan wood to smoke it. The Jamaicans use pimento but you cant find that anywhere but online.

If I do jerk salmom, I slow bake it while itd covered in seasoning with sauteed onions and garlic cloves
