The protest I went to a couple weeks ago I made sure I kept my mask on and turned my phone off or had it in airplane mode most of the time.

Most of them, yes, unless it's an iPhone then you can't.

The problem stems from the baseband processor that sits underneath everything being 100% accessible by remote even when the phone is "off". Accessing it can allow a 3rd party to gain access to the wireless networks, camera, microphone, gps transponder, etc all while the phone is off. The only way to stop this is to either completely discharge the battery or to remove the battery.
