it's funny you mentioned people bein impatient... I know a black couple who boils their ribs then grills them fa a short timeOvernight. Then I smoke em for 2-3 hrs, oak and hickory or oak and apple,sometimes cherry or peach too. Wrap em for another hour then sauce em and cook em for bout another 45 to an hr.
Fam be impatient as hell but they can't deny the results.

I've tried the boiling thing, I didn't really like how they turned out.I get that. But I wonder about the taste. Boiling meat usually makes it a little bland.
Wrapping them in foil steams them in the juices and makes them super tender. Its a longer process though so probably why some go the boil route I guess

I like to sometimes cover the ribs and stick em in the oven, let em steam after taking them off the grill for a lil bit. Then I pour the bbq sauce over em and sit it back in the oven uncovered on low to get the sauce sticky.
