You're disrespecting the defense by limiting how much they can contribute. You're taking away their ability to score, and limiting their ability to win the game. Basically saying scoring is a privilege that only goes to the offense.
Let's say in Possession 1 Team A's offense throws an incomplete pass. Then when Team B is on offense, Team A scores a pick 6...Team A should win. I don't understand why you don't see minimizing that defensive accomplishment as disrespectful to the defense.
This idea also removes special teams from the game completely. I don't see why eliminating special teams from OT altogether, and handcuffing the defense is seen as a big improvement in the current system.
I'm not handcuffing the defense, you're just missing the point of the whole thing. You essentially want the defense to be able to win the shootout all by itself, which is something that offense has no way of doing, so you'd basically be giving a slight edge to teams with superior defenses. The point of what I'm proposing is to eliminate any bias for either offense or defense. To win, a team has to demonstrate superior execution on both sides of the ball. If the defense stops the score, it's done it's job. They get a pat on the back, but the offense has to do it's job too.
And yes, this cuts special teams out, but offense and defense are the two primary phases. If anyone was butt hurt about losing special teams. You could throw in field goals as a potential offensive option for each round. That way responding teams would have the option of either matching the field goal or going for the win. Still, I'd prefer keeping it to offense and defense.
