I remember going to was it Arlington? Or somewhere closer to DC and they had something like bourbon street catfish or something like that
Usually, I stray away from dishes birthed where I'm from being cooked in another city but nothing else was appealing so I tried it and immediately regretted it. I don't know if that chef was from Nola or was trying to make inspired dishes but that shit was nasty af
My issue with that is people from that area will think that's what authentic Louisiana food will taste like
Now, another city I frequent is Houston and they have a really deep African/Ethiopian population and those dishes are true to their native countries

I'll just add the 3rd Coast Pipeline is a thingunderstandable to be a bit skeptical.
From the bit I've encountered in the United States of America usually going to a restaurant that has international cuisine (outside of Italian or Tex-Mex LMAO) the people opening establishments are from said country or study a long time crafting that typical type of food.
I can understand you being cautious though after your Cajun/ New Orleans inspired food disappointment though
