It's more that cows are big animals. Each cow produces a lot of meat. With the exception of pigs, all the bigger animals are lower on the list. Think about how many chickens it takes to make one cow's worth of meat. They also require more space to raise, so farms can generate more of the smaller animals.

I've tried squid, don't think I've ever had octopus before.

Alligator tail... Delicacy I tried in Africa
Kangaroo, Ostrich meat... Shits tasty.
Generally speaking though if I was doing this on me personally then it would probably be chicken #1 (not because I particularly like it as my fave, but it is a cheap and healthy source of protein), #2 tuna, #3 beef.
Then mix in some different types of fish (mackerel, sardines, salmon)
And every now and then some turkey, Guinea fowl, lamb, ostrich fillets.
It's funny with the pigeons. Me and my cousin used to joke when we were kids on how one of the chicken spots near us used to sell ridiculously low priced wings. I said they probably using them pigeons at the park across from it... Now I see pigeons as a highly consumed meat smh
Also with the sharks, there was an article on how the fish and chips shops (which is traditionally cod or haddock), have been selling shark instead unbeknownst to their customers.
